Job summary

Firebrand Artisan Breads is hiring a Bread Production Associate for a full-time, on-site role in Alameda, CA. This hands-on production position involves scaling, mixing, shaping, and baking sourdoughs, baguettes, and loaves to a tight schedule.

Training is provided and no bakery experience is required. You’ll measure ingredients, monitor fermentation, operate mixers and ovens, keep the station clean per health standards, and assist with end-of-shift cleanup.

Qualifications

• Basic math and unit conversions (lb to oz, g to kg).
• Valid California Food Handler's Card or ability to obtain one.
• Willingness to learn and follow detailed instructions.
• Strong work ethic and a team-first attitude.
• Nice to have: high school diploma or equivalent; bakery or food production experience; bilingual English/Spanish.

Responsibilities

• Scale, mix, shape, and bake breads per recipe and schedule.
• Weigh ingredients accurately and perform basic unit conversions.
• Monitor fermentation and proofing with the team.
• Operate mixers, dividers, ovens, and proofers safely.
• Keep workstations clean and sanitized to health standards.
• Help cool, slice, and store finished bread products.
• Communicate with team via in-person and Slack; assist with end-of-shift cleanup.

The role

You'll be part of the crew that turns flour, water, and time into handcrafted sourdoughs, baguettes, and specialty loaves every day. This is hands‑on production work — scaling, mixing, shaping, and baking to a tight schedule — in a fast‑paced, team‑first bakery. No bakery experience required; we'll train you.

What you'll do

• Scale, mix, shape, and bake breads following our recipes and production schedule
• Weigh and measure ingredients accurately; do basic math and unit conversions
• Monitor fermentation and proofing and adjust with your team
• Safely operate mixers, dividers, ovens, and proofers
• Keep workstations clean and sanitized to California health and GMP standards
• Help cool, slice, and store the finished product
• Communicate in person and on Slack; pitch in on end‑of‑shift cleaning

Physical requirements and schedule

• Stand for 8+ hours; lift up to 50 lbs repeatedly; frequent kneading, lifting, and bending
• Heat, cold, and humidity are typical of a bakery
• Shift start times vary with production needs — early morning, overnight, and weekend availability may be required
