Job summary

Orijin Bakery in Downtown Ann Arbor is seeking a Bread Baker to craft artisan breads, ferment dough, and bake with precision. You will work with a skilled team to maintain high quality and consistency in a fast-paced environment.

Responsibilities include following recipes, managing dough development, and meeting daily production goals. Availability for early mornings, weekends, and holidays is required. ServSafe certification is a plus but not required. We offer benefits and growth opportunities.

Qualifications

  • At least one year of commercial bakery or professional kitchen experience.
  • Experience with artisan breads, naturally fermented doughs, or sourdough is strongly preferred.
  • Strong attention to detail and commitment to quality.
  • Ability to work efficiently in a fast-paced production environment.
  • Excellent organization and time management skills.
  • Understanding of food safety and sanitation practices.
  • Availability for early mornings, weekends, and holidays.
  • ServSafe certification is a plus, but not required.

  • Prepare, mix, ferment, divide, shape, proof, score, and bake artisan breads according to established recipes and production schedules.
  • Monitor dough development throughout every stage of production and make adjustments as needed to achieve exceptional results.
  • Produce consistently high-quality breads while meeting daily production goals and timelines.
  • Participate in daily product tastings and quality evaluations.
  • Maintain exceptional cleanliness, organization, and sanitation throughout the bakery.
  • Properly label, store, and rotate ingredients and finished products using FIFO practices.
  • Safely operate and maintain commercial bakery equipment.
  • Support pastry production and other bakery operations as business needs require.
  • Assist with developing and refining new breads and seasonal offerings.
  • Work collaboratively with the bakery team to ensure smooth daily operations.

We're looking for a passionate and skilled Bread Baker to help bring our artisan bread program to life. In this role, you'll prepare, ferment, shape, score, and bake handcrafted breads that serve as the foundation of our bakery. Working alongside a talented team of bakers, you'll take pride in producing exceptional products with consistency, precision, and care while helping us deliver an outstanding experience to every guest.

  • Reliable transportation and the ability to commute to our downtown Ann Arbor location, including planning for parking and arriving before scheduled shifts.

  • Positive attitude and willingness to support the bakery team wherever needed.
Physical Requirements
  • Ability to stand and walk for the majority of each shift, frequently 8-10 hours.
  • Frequently lift, carry, push, and pull items weighing 25-35 pounds.
  • Occasionally lift and move up to 50 pounds.
  • Regularly bend, squat, kneel, reach, twist, and perform repetitive motions throughout production.
  • Frequently use fine motor skills and sustained hand strength while mixing, shaping, scoring, and handling dough.
  • Safely operate commercial bakery equipment, including mixers, ovens, racks, and other production equipment.
  • Comfortable working in environments with flour dust, heat, steam, humidity, refrigeration, and changing temperatures.
