Requirements :
POSITION GOALS & RESPONSIBILITIES :
  • GOAL : Create lifetime guests by delivering uncompromising quality service to each guest at each meal every day. Ensure the highest level of food quality and consistency in a clean, safe, profitable, and fun environment. Lead the chef team in preparing great tasting Italian food. Responsible for operational efficiency and EBITDA of all back of house functions. Hire, train, and develop employees in cooking, food preparation, safety, and sanitation.

  • Create lifetime guests as measured by review tracker and guest feedback related to food.
FAMILY MEMBER FOCUS
  • Effective training as measured by employee feedback.
  • High retention and satisfaction of back of house staff and chefs.

  • Achieve financial results meeting or exceeding company and unit goals based on food cost, labor, and training costs.
SPECIFIC POSITION RESPONSIBILITIES :
GUEST FOCUS
  • Maintain standards within the BOH to improve food quality and execution.
  • Utilize review tracker and guest feedback to improve satisfaction and food quality.
  • Ensure all BOH opening and closing duties meet standards, including station readiness and hygiene.
  • Ensure staff punctuality and readiness for shifts.
  • Use NBO to match ordering, preparation, and stocking with guest counts.
  • Direct and coach staff during food production and line setup.
  • Conduct menu tastings for flavor, appearance, and texture consistency.
  • Perform or delegate line checks to ensure safety, equipment, and inventory readiness.
  • Follow safety, sanitation, and security policies, providing regular training.

Conduct BOH pre-shifts and participate in FOH pre-shifts.

FAMILY MEMBER FOCUS
  • Recruit, interview, and select outstanding BOH staff, ensuring adherence to uniform standards.
  • Develop team through ongoing feedback and coaching.
  • Provide training and cross-training for staff.
  • Use current training materials and ensure regular performance reviews and coaching.
  • Follow wage and raise guidelines.
  • Update and communicate recipes and procedures to ensure high-quality food.
FINANCIAL FOCUS
  • Manage scheduling and workload to control costs and ensure quality.
  • Implement solutions to control waste and food costs using NBO.
  • Perform inventories, order supplies based on usage, and ensure proper storage and rotation.
  • Update NBO regularly to maintain quality and efficiency.
  • Work collaboratively to increase sales and EBITDA through teamwork.
LEADERSHIP
  • Demonstrate passion and belief in the BBRG Mission.
  • Participate in weekly management meetings.
  • Hold team accountable and foster open communication.
  • Provide performance feedback and training as needed.
  • Address performance issues appropriately.
  • Ensure staff have the tools to succeed.
  • Create a fun, rewarding, and professional environment.
