Blue Lake Casino & Hotel is looking for a skilled individual to analyze recipe costs, determine item profitability, and manage weekly purchasing for the Blue Fusion Bistro. The role requires maintaining high sanitation standards and presenting products to guests with excellence.
The candidate will ensure guidelines are met, assist team members, and uphold a strong sense of urgency while reporting maintenance needs as necessary.
Salary Range: $54,000.00 To $67,000.00 Annually

This position is responsible for analyzing recipe costs, determining profitability of items and makes weekly purchases. Other responsibilities include preparing and displaying the product while maintaining proper sanitation within the department. The Chef must perform these duties all while providing excellent guest service to our guests.
This position typically supervises a staff of approximately five to ten Team Members. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training Team Members; planning, assigning, and directing work; appraising performance; rewarding and disciplining Team Members; addressing complaints and resolving problems.Develops and manages department directors and managers. Liaison to the Blue LakeRancheria, local community, government agencies, suppliers and vendors.
High school diploma or GED equivalent and minimum one-year related experience or trainingand prefer candidate with five years or more experience.
Ability to read a limited number of two- and three-syllable words and to recognize similarities and differences between words and between series of numbers. Ability to print and speak simple sentences.
Ability to add and subtract two-digit numbers and to multiply and divide with 10's and 100's. Ability to perform these operations using units of American money and weight measurement, volume, and distance.
Ability to apply common sense understanding to carry out simple one- or two-step instructions. Ability to deal with standardized situations with only occasional or no variables.
Familiar with sanitation standards for restaurants. Must be able to work without supervision.
