Job summary

The Whit in New Orleans seeks an experienced PM Beverage Operations Captain to help build and sustain beverage systems for our opening period. You will manage service readiness, inventory controls, batch accuracy, and close-out procedures with precision and consistency.

You are a skilled bartender with a passion for luxury hospitality, strong organization, and clear communication, capable of collaborating with the AM team and F&B leadership to refine operations from day one.

Qualifications

  • Previous craft cocktail, fine dining, luxury hotel, or high-touch hospitality experience.
  • Strong cocktail, spirits, wine, Champagne, and beverage knowledge.
  • Experience with beverage inventory, pars, product controls, and closing procedures strongly preferred.
  • Comfortable preparing espresso and milk‑based coffee beverages.
  • Familiarity with Toast POS or a similar system preferred.
  • Exceptional organization, accuracy, and attention to detail.
  • Strong written and verbal communication skills.
  • Ability to follow established procedures while identifying opportunities to improve efficiency.
  • Evening, weekend, and holiday availability.

Responsibilities

  • Prepare and serve cocktails, spirits, wine, Champagne, zero‑proof beverages, coffee, and espresso drinks to established standards.
  • Complete pre-service bar readiness checks, including product levels, batching, garnishes, glassware, coffee supplies, equipment, and station setup.
  • Verify and maintain established beverage pars throughout service.
  • Monitor cocktail specifications, measurements, presentation, and product consistency.
  • Maintain organized liquor, wine, refrigeration, storage, and service areas throughout the shift.
  • Track and document spills, waste, breakage, comps, 86s, substitutions, and product discrepancies.
  • Follow established POS procedures and support accurate ringing, transfers, voids, and beverage check controls.
  • Monitor product movement and communicate unusual usage or inventory concerns to F&B leadership.
  • Identify batching, prep, and replenishment needs and provide clear production notes to the AM Beverage Operations Captain.
  • Maintain FIFO rotation, labeling, dating, and proper storage standards.
  • Perform nightly counts or spot inventories as assigned.
  • Complete beverage closing checklists and verify stations are properly reset for the following day.
  • Ensure open wine, Champagne, juices, syrups, batches, and specialty products are stored and preserved correctly at close.
  • Complete end‑of‑shift beverage notes, including inventory concerns, 86s, maintenance issues, prep needs, and operational follow‑up.
  • Report equipment, refrigeration, POS, or facility issues promptly and document outstanding items.
  • Support receiving, inventory counts, ordering procedures, and beverage audits as assigned.
  • Assist with training and reinforcing established beverage recipes, preparation methods, and operating procedures.
  • Work closely with the AM Beverage Operations Captain and F&B leadership to continuously refine systems during the opening period.

PM Beverage Operations Captain

The Whit is an intimate luxury hotel housed in a beautifully restored 19th‑century mansion in the heart of New Orleans. Home to 15 guest rooms, a bar, cocktail salon, library, refined food and beverage, and elegant private events, The Whit offers a hospitality experience that feels more like staying in the home of an extraordinary host than a traditional hotel.

As part of our founding Food & Beverage team, the PM Beverage Operations Captain will helpestablishandmaintain the systems, standards, and controls that keep The Whit’s beverage programoperatingconsistently each evening.

This is a hands‑on bartending and operational position focused on service readiness, beverage standards, inventory controls, pars, POS accuracy, shift documentation, closing systems, and communication between the AM and PM beverage teams.
