Job summary

Barberry in San Antonio, inside Sítio El Tropicano, seeks a Banquet Sous Chef to lead daily culinary production for meetings, weddings, and hotel events. You will translate banquet orders into action, supervise banquet cooks, and ensure on-time, high-quality service.

Reporting to the Culinary Director, you will partner with events teams to plan menus, staffing, and service timelines, while maintaining cost awareness and consistent standards across multiple simultaneous events.

Qualifications

• Three or more years of progressive culinary experience in banquets, catering, hotels, resorts, or similar high-volume operations.
• Experience leading banquet cooks and coordinating multiple events.
• Strong command of banquet orders, production schedules, and plating; inventory, purchasing, and payroll systems preferred.
• ServSafe Manager certification required or able to obtain within timeline.

Responsibilities

• Lead banquet culinary production and service for meetings, weddings, social events, and other catered programs.
• Supervise and develop banquet cooks; manage staffing to match event calendars.
• Review BEOs, calendars, and guest counts; translate into production timelines and prep lists.
• Coordinate with leadership on menus, timelines, and dietary accommodations.
• Maintain food quality, portion control, and presentation across events.
