Job summary

Fontainebleau Miami Beach is seeking a Chef de Partie to support daily kitchen operations in a luxury hotel, upholding the highest standards of cleanliness and HACCP-compliant food preparation.

You will perform mise-en-place, prep fruits, vegetables, salads and fish, monitor refrigeration and equipment, and assist with duties across a high-volume, multi-unit kitchen team.

Qualifications

• Knowledge of health and safety, sanitation, chemical usage, fire procedures, and HACCP.
• Knowledge of all kitchen equipment operations.
• Ability to work with management, staff and guests.
• High school education or equivalent; culinary training preferred.
• Experience in high quality, high volume, multi-unit operations preferred.

Responsibilities

• Assist the Chef de Partie with daily kitchen operations while maintaining cleanliness and sanitation.
• Prepare mise-en-place in advance of cooking; review recipe, measure ingredients and set up equipment.
• Prepare and handle fruits, vegetables, salads, and fish per HACCP guidelines.
• Check and clean refrigerators, trolleys, utensils, and equipment daily.
• Maintain the kitchen area in a clean, hygienic condition.
• Assist with product pickups from stores per HACCP guidelines and company policies.
