Job summary

Detroit Foundation Hotel is seeking a Banquet Prep Cook to join our culinary team in Detroit. You will work closely with Executive Chef and banquet staff to prepare ingredients for high-volume events and ensure prep lists are completed accurately.

You will maintain organization, follow HACCP standards, and assist with plating and service while adapting to a fast-paced environment. The role requires early mornings, evenings, weekends, and holidays as needed.

Qualifications

• Passion for culinary arts and hospitality.
• Experience as prep cook, banquet cook, line cook, or similar.
• Banquet, catering, hotel, or high-volume kitchen experience preferred.
• Basic knife skills and large-batch prep knowledge.
• Knowledge of food safety, HACCP; ServSafe preferred or obtained within 30 days.
• Ability to read banquet event orders (BEOs) and recipes.
• Strong organizational and time management skills.
• Conversational proficiency in English; reading recipes and communication.
• Ability to lift up to 25 pounds regularly and up to 100 pounds with assistance.
• Flexible availability including mornings, evenings, weekends, holidays.

Responsibilities

• Uphold Aparium's People, Place, and Character in daily operations.
• Prepare vegetables, fruits, proteins, sauces, and desserts per BEOs and schedules.
• Complete daily banquet prep lists to support multiple events.
• Assist in wedding, conference, and hotel catering preparation.
• Portion, label, date, rotate, and store food per HACCP standards.
• Set up banquet production areas and ensure ingredients are ready before service.
• Assist banquet cooks with plating and replenishment during service.
• Maintain clean, sanitized prep areas and storage spaces.
• Minimize food waste through proper prep and storage.
• Communicate production needs and shortages with leadership.
• Participate in daily lineups and training opportunities.
