Job summary

Brasada Ranch in Central Oregon is hiring a Banquet Cook to assist the chef team with daily banquet operations and event execution. You will help with high-quality plating, prep, and timely service for weddings and gatherings in a breathtaking resort setting.

We value a strong work ethic, teamwork, and attention to detail. You should be able to work nights, weekends, and holidays, and maintain top sanitation and safety standards while delivering exceptional guest experiences.

Qualifications

  • Experience in professional cooking and knife handling.
  • Knowledge of safety, sanitation, and food handling.
  • Previous prep or line cook experience.
  • Food Handler's permit required.
  • Able to work nights, weekends, and holidays.
  • Must read and understand basic cooking directions.
  • Able to stand for long periods (up to 8 hours).
  • Able to lift up to 50 pounds occasionally.
  • Food Handlers Card required.

Role Description

The role of a Banquet Cook is to assist the chef team in all aspects of day to day operations of the banquet department. The Banquet Cook will maintain a high level of performance consistent with the standards set in place by the Executive Chef. Guest and owner satisfaction in our restaurants and other outlets revolves around inspired plating styles, high quality ingredients, and overall dining experience. The Banquet Cook is responsible for the daily preparation of food items for banquet events as well as execution of events.

To be successful in this position, you must have work ethic and attention to detail that is required to consistently produce high quality culinary creations for our members and guests. You will need the motivation and drive to learn and grow in your position and be an integral member of a team that strives to be better each and every day.

Requirements
General Responsibilities
  • Prepares and sets up banquets according to department guidelines.
  • Proficient in cooking techniques and use of all restaurant equipment.
  • Prepares all food items as directed in a sanitary and timely manner and knows all ingredients of each menu item on banquet menus.
  • Prepares menu items and is able to execute events on time and to the Chef’s standards.
  • Ensures that products are on hand and prepped in a timely manner for Banquet Events.
  • Must be able to cook all menu proteins to specified temperatures.
  • Follows recipes, portion controls, and presentation specifications as set by the restaurant.
  • Cleans and maintains station while practicing exceptional safety, sanitation, and organizational skills.
  • Has understanding and knowledge of how to properly use and maintain all equipment in the kitchen.
  • Assists with the cleaning, sanitation, and organization of the kitchen, walk-in coolers, and all storage areas.
  • Ability to maintain high energy and positive attitude with our guests always in mind.
  • Performs additional responsibilities as requested by the Chef, Sous Chef or Cook III.
  • Professional communication skills are required.
  • Ability to work in a team environment.
  • Ability to work calmly and effectively under pressure.
  • Must have problem-solving abilities, be self-motivated and organized.
  • Commitment to quality service and food and beverage knowledge.Perform additional responsibilities and duties as assigned.

  • Strong understanding of professional cooking and knife handling skills.
  • Understanding and knowledge of safety, sanitation, and food handling procedures.
  • Previous prep or line cook experience.
  • Food Handler's permit required.
  • Must be able to work nights, weekends and holidays.
  • Must be able to speak, read and understand basic cooking directions.
  • Be able to work in a standing position for long periods of time (up to 8 hours).
  • Be able to reach, bend, stoop and frequently lift up to 35 pounds and occasionally lift/move 50 pounds.
