Position Overview

BASIC FUNCTION:

The Banquet Chef is responsible for all food and beverage preparation for the functions scheduled on the property and to assist in the daily functionality of the kitchen/culinary department.

Essential Functions
  • Responsible for writing transfers and food requisitions, overseen by the Executive Chef.
  • Prepare, with assigned cooks, food items designated by the Executive Chef according to standard recipes and policies.
  • Promote teamwork between the kitchen and other food and beverage outlets.
  • Consult with the Executive Chef on daily and weekly banquet forecasts and special functions.
  • Coordinate with cooks on duty regarding mise en place and food requisitions for upcoming functions.
  • Maintain the care and cleanliness of all kitchen equipment.
  • Place orders with the Stewarding Department for plates, silverware, mobile equipment, etc., needed for each function.
  • Supervise and train staff.
  • Prepare cooking alcohol beverage requisitions for the Executive Chef’s signature dishes.
Qualifications
  • High school diploma or equivalent.
  • Three to five years of culinary experience in a multi-unit hotel or conference center.
  • Previous experience supervising a staff of fifteen or more employees.
  • Three years of culinary training.
  • Knowledge of culinary departments.
  • Good working knowledge of basic accounting.
  • Creative, innovative, and assertive personality.
  • Excellent communication skills.
