Job summary

Carlo’s Bakery, located in Jersey City, NJ, is seeking a self-motivated baker to assist our R&D department with recipe testing and documentation. The role involves developing new concepts and improving existing product lines for quality and longevity.

Qualifications

• Some college or culinary school preferred.
• Experience in a professional kitchen/bakery setting to understand flow and concept.
• Proficiency with Microsoft Office and Google Suite.
• Ability to meet tight deadlines and stand for extended periods.

Responsibilities

• Follow directions of a recipe to test recipe formulations, raw materials, and produce samples.
• Use basic math to scale up recipes as needed.
• Assist Food Scientists and Head of R&D with recipe/product development.
• Assist with internal shelf-life studies and other lab tests.
• Maintain cleanliness, organization and stock of ingredients and tools in R&D kitchen.
• Enter recipes into Excel and other R&D/Production databases.
• Prepare samples to be shipped to clients as needed.
• Follow GMP standards.
• Observe and document pilot runs of new products and update specs.
