Job summary

Scratch Bakery Café is seeking an experienced Bakery Production Manager to lead and scale production for our growing artisan bakery café. This hands-on role requires building systems, training teams, and expanding operations across breads, laminated pastries, cakes, and café pastries.

The ideal candidate will drive production planning, ensure quality and safety, and collaborate with the Executive Pastry Chef to refine recipes while maintaining the scratch-baked craftsmanship we are known for.

Qualifications

• Minimum 5 years of bakery production experience.
• Proven experience managing teams in a bakery or high-volume kitchen.
• Strong leadership and team development skills.
• Experience building systems and scaling production operations.
• Strong organizational and communication skills.
• Hands-on experience with artisan bread and laminated pastry production.
• Ability to work overnight shifts consistently.
• Passion for scratch baking and high-quality products.

Responsibilities

• Lead and manage a production team (currently 10 staff, growing).
• Oversee daily production across all product categories.
• Manage production of breads, laminated pastries, cakes, cookies, and café pastries.
• Develop and manage production schedules and workflow systems.
• Hire, Train, mentor, and hold staff accountable to performance standards.
• Maintain product consistency and quality across offerings.
• Scale production systems to support business growth.
• Manage ordering, inventory, and ingredient control.
• Collaborate with Executive Pastry Chef and team on recipes development.
• Ensure compliance with food safety and sanitation standards.
• Participate in hands-on production.
