Job summary

Scratch Bakery Café is seeking an experienced Bakery Production Manager to lead high-volume production for our growing artisan bakery café. You will oversee production across breads, laminated pastries, cakes, cookies, and cafe pastries, building systems and managing a team to sustain craftsmanship.

This is a hands-on leadership role requiring overnight shifts, strong organizational skills, and a passion for scratch baking.

Qualifications

• Minimum 5 years of bakery production experience.
• Proven experience leading teams in a bakery or high-volume kitchen.
• Strong leadership and staff development skills.
• Experience building systems and scaling production operations.
• Overnight shift experience required.
• Passion for scratch baking and high-quality products.

Responsibilities

• Lead and manage a production team (currently ~10 staff, growing)
• Oversee daily production across all product categories
• Manage production of breads, laminated pastries, cakes, cookies, and café pastries
• Develop and manage production schedules and workflow systems
• Hire, train, mentor, and hold staff accountable to performance standards
• Maintain product consistency and quality across all offerings
• Scale production systems to support business growth
• Manage ordering, inventory, and ingredient control
• Collaborate with Executive Pastry Chef and team on recipe development and refinement
• Ensure compliance with food safety and sanitation standards
• Participate in hands-on production
