Insomniacookies is seeking an Assistant Bakery Operations Manager in Asheville, NC to lead daily bakery operations and develop talent for future BOM leadership. The role blends hands-on execution with coaching across a fast-paced, high-volume bakery setting.

The position emphasizes urgency, accuracy, and accountability, with opportunities to step into full bakery ownership during BOM absences and leadership transitions.

Qualifications

1+ year leadership experience in restaurant, retail, or hospitality operations.
Strong operational discipline and attention to detail.
Ability to coach and develop hourly team members.
Comfortable working in fast-paced, high-volume environments.
Ability to perform all bakery roles during peak periods.

Responsibilities

Operational Execution: manage core bakery operations, inventory rotation, scheduling support, staffing coordination, and administrative checklists.
Talent & Team Development: assist recruiting, onboarding, training, and provide coaching and feedback.
Leadership & Ownership: run bakery operations in BOM's absence and partner with leadership to close gaps.
