Job summary

Morongo Casino Resort & Spa is seeking a Baker to prepare a variety of breads, pastries, cakes and pies according to recipes and schedules. You will work in a fast-paced, high-volume kitchen with strict sanitation and food safety standards.

The role requires 2–3 years of professional baking experience, a high school diploma, and a food handler certification (or willingness to obtain). Casino/resort kitchen experience is preferred.

Job description

The Baker is responsible for preparing and executing all baked goods and desserts including breads, pastries, cakes, and pies according to recipe specifications and production schedules. This position ensures consistent quality, proper food handling, and adherence to sanitation standards while working in a high-volume kitchen environment.

ESSENTIAL DUTIES AND RESPONSIBILITIES:
  • Prepares baked goods such as breads, pastries, pies, and cakes according to established recipes and production standards.
  • Measures, mixes, portions, and arranges ingredients and products for baking and service.
  • Ensures proper baking temperatures, timing, and techniques for a wide range of items.
  • Maintains cleanliness and organization of workstations, equipment, and storage areas at all times.
  • Follows food safety and sanitation protocols, ensuring proper labeling and storage of all ingredients.
  • Adheres to large production schedules while maintaining consistency and presentation quality.
  • Demonstrates accuracy in measuring and scaling ingredients in a fast-paced environment.
  • Operates ovens, mixers, and other bakery equipment safely and effectively.
  • Communicates with pastry chef and kitchen leadership regarding inventory, prep needs, and production goals.
  • Performs other job-related duties as assigned.
SUPERVISORY RESPONSIBILITIES:

This position does not have direct supervisory responsibilities but may provide guidance or support to other team members.

QUALIFICATIONS:
  • Strong baking skills with knowledge of pastry and dessert preparation.
  • Ability to read and follow detailed recipes and instructions.
  • Familiarity with commercial bakery equipment and tools.
  • Excellent time management, organizational, and multitasking abilities.
  • Ability to work independently and as part of a team in a high-volume production environment.
  • High regard for food quality, consistency, and cleanliness.
EDUCATION and/or EXPERIENCE:
  • High school diploma or equivalent preferred.
  • Completion of a baking or pastry arts program is preferred.
  • Food Handler Certification required or must be obtained upon hire.

  • Prior experience in a casino, resort, or large-scale production kitchen is preferred.
LICENSES, CERTIFICATES, REGISTRATIONS:

Must have successfully completed a background check and obtained a gaming license issued by the Morongo Gaming Agency, as required.

LANGUAGE SKILLS:

Must be able to read and interpret documents in English, such as instructions, guidelines, policies, and procedures. Must also be able to communicate clearly and effectively with team members, management, and guests.

  • Communication Skills: Must be able to communicate clearly and professionally with pastry team members, chefs, and kitchen leadership; responsible for following instructions, coordinating production, and maintaining proper handoffs during shift transitions.
  • Lifting and Carrying: Frequently lifts and carries bags of flour, sugar, trays of baked goods, mixing bowls, and baking equipment weighing up to 50 pounds; may involve lifting above shoulder level or transporting items between prep and baking stations.
  • Manual Dexterity: Constantly uses hands and fingers to knead dough, operate baking tools, portion ingredients, handle hot trays, and decorate pastries with precision.
  • Mobility: Continuously moves throughout the bakery, prep areas, and walk-in coolers; requires standing, walking, bending, reaching, and lifting for extended periods during preparation and baking.
  • Stationary Work: Rarely seated; duties are performed primarily on foot while preparing, baking, and assembling pastry items.
  • Tool Operation: Frequent use of commercial baking equipment including mixers, ovens, sheeters, proofers, scales, and decorating tools; responsible for safe operation, cleaning, and storage of all baking tools and equipment.
  • Visual Acuity: Requires close and distant vision to measure ingredients, monitor doneness, ensure consistent product quality, and apply detailed finishing touches to baked goods.
  • Working Conditions: Routinely works in a hot, humid, and fast-paced kitchen and bakery environment with exposure to flour, cleaning agents, ovens, and sharp tools. Regular exposure to a smoking environment while transitioning through casino or public areas.
WORK ENVIRONMENT:

This is a dynamic, fast-paced environment that requires the ability to adapt and perform under pressure. The casino operates with moderate to loud noise levels and is a smoking environment, requiring team members to work comfortably in these conditions.

WORKING HOURS:

Morongo Casino Resort & Spa operates 24 hours a day, 365 days a year; therefore, flexibility in scheduling is essential. Team members must be available to work shifts that may include evenings, weekends, holidays, and special events. Schedules are subject to change based on business needs and may include overtime, as well as work on both weekdays and weekends.
