Rivers Casino Des Plaines seeks an experienced F&B leadership professional to oversee Casino Floor, Aqua Bar, Lotus, Bet Rivers and High Limit Operations. You will manage staffing against forecasted volume and budgets, control labor, costs, and purchasing, and drive service initiatives while upholding quality and culture.

The role requires strong leadership, budgeting and communication skills, with a focus on achieving profitability and staff development within a dynamic hospitality environment.

Qualifications

• 3–5 years in a leadership role within F&B, gaming or hospitality.
• BA degree in gaming/hospitality or related field preferred.
• Strong communication and organizational skills.
• Comfort with budgeting, forecasting and basic math.

Responsibilities

• Oversee all facets of Casino Floor, Aqua Bar, Lotus, Bet Rivers and High Limit Operations.
• Ensure staffing aligns with forecasted volume and budgetary guidelines.
• Manage labor and cost of goods to budget.
• Ensure compliance with products, supplies, and purchasing policies.
• Drive service initiatives and maintain high food quality and culture.
• Develop and evaluate supervisors and staff performance.
• Coordinate with other departments and communicate to F&B staff.
• Hire, manage and discipline subordinates; handle HR-related duties.
• Meet profit objectives for outlets and support statewide compliance programs.

Description

Duties and Responsibilities:

• Directly oversees all facets of the Casino Floor, Aqua Bar, Lotus, Bet Rivers and High Limit Operations.
• Responsible for ensuring proper staffing for forecasted volume and budgetary guidelines
• Manages labor, cost of goods & other expenses to budget
• Effectively manages, tracks and ensures compliance with all products; commodities and papers supplies
• Responsible for the financials of the Casino Floor, Aqua Bar, Lotus, Bet Rivers and High Limit
• Responsible for development & performance of supervisors and line staff
• Responsible for hiring, managing, firing subordinates
• Communicates with operational departments and ensures appropriate information disseminated to F&B staff
• Establishes performance & profit objectives for Casino Floor, Aqua Bar, Lotus, Bet Rivers and High Limit outlets. Performs the duties and responsibilities associated with the Illinois Gaming Board Statewide Voluntary Self-Exclusion Program as described in Section A of the Rivers Casino – Des Plaines ICS
• Responsible for implementing & enforcing F&B procedures
• Drives Service Initiatives
• Responsible for maintaining our high level of expectations for food quality & overall culture
• Performs all other duties as may be assigned

Job Requirements:

• 3 – 5 years F&B leadership role, in gaming or hospitality environment
• BA Degree in gaming/hospitality or related field preferred
• Excellent oral and written communication skills.
• Excellent leadership / motivation skills.
• Excellent organization and planning skills.
• Excellent knowledge in various computers programs including Microsoft Office (Word, Excel, etc.).
• Budget and mathematical skills.
• Ability to communicate with Team members and guests
