Ole & Steen in New York seeks an Assistant Head Baker to oversee daily production of Danish breads and pastries with an artisan, international team.

Ideal candidates are passionate about long fermentation, food safety, and leading a small team; willingness to work overnights, weekends, and holidays is required.

Qualifications

• 2-4 years of professional baking experience preferred.
• Experience with Danish or Scandinavian baking methods is a huge plus.
• Ability to work overnight, weekends, and some holidays.
• Able to lift 50+lbs and stand/bend for extended periods.
• Basic math skills and excellent time management.

Responsibilities

• Oversee daily production of breads, ryes, rolls, and pastries according to traditional Danish recipes.
• Observe and maintain product quality and adjust oven times as needed.
• Manage a bakery team of up to 6, including scheduling.
• Maintain organization and cleanliness of storage and refrigeration.
• Check deliveries and ensure proper labeling and storage.
