Job summary

Gana-A'Yoo Services Corporation (GSC) Antarctica seeks a Sous Chef for McMurdo Station. Responsible for supervising production cooks, executing a 35-day menu, and maintaining safety standards in a demanding Antarctic environment.

You will train staff, coordinate with the Food Service Coordinator, manage leftovers, and oversee baking, deli operations, and flight meals while delivering high-quality meals to a remote population.

Qualifications

• High School education or GED.
• Graduate of a culinary arts or apprenticeship program for broad menu production.
• Three years of supervisory experience in high-volume food service; eligible as alternative to a degree.

Responsibilities

• Prepare items on a 35-day menu cycle, including holiday items and specials.
• Coordinate with Sous Chefs and Food Service Coordinator on production and leftovers.
• Taste, adjust flavors, and present foods; supervise safe cooking techniques and temps.
• Lead daily production meetings and assign tasks for production and service.
• Ensure safe, sanitary kitchen operation and proper labeling of food.
• Order weekly items, manage waste per guidelines, and monitor real-time production metrics.
