Job summary

Biltmore is seeking a dining room support associate to assist servers and supervisors in delivering world-class service in the Inn dining room. You will help reset tables to Biltmore standards, stock service areas, and maintain a spotless dining environment.

The position schedule typically runs 6:00am–1:00pm with weekend and holiday availability required and a flexible 20–29 hour workweek. Employee meals are provided, with benefits for eligible roles.

  • Assist in delivering food to tables and seating guests as required.
  • Follow safety, cleanliness, and service procedures and dress code.

Job description

Job Description Meet Forbes standards supporting guest experiences dining at the Inn by assisting Dining Room Servers and Dining Room Supervisors in providing world class food and beverage service to guests courteously and efficiently. Reset tables to Biltmore standards and in accordance with Forbes. Stocks and maintains all items needed for resets during work shift. Also assists in the maintenance of the dining room, side stations, kitchen service areas, dish breakdown area and service equipment.

Schedule can vary, but is generally: 6:00am-1:00pm. Weekend and Holiday availability required. Flex: A position working an average of 20-29 hours per week (between 1000 - 1559 hours/year).

Essential Job Duties:
  1. Serve water to guests immediately upon their arrival; replenish throughout the meal.
  2. Anticipate guests’ needs, respond promptly and maintain positive guest relations at all times.
  3. After guests depart, clear tables, transport items on tray from restaurant to breakdown area and separate wares and food according to procedures.
  4. Reset tables to Inn specifications and Biltmore Standards.
  5. Assist in delivering food to tables, seating guests and other duties as assigned.
  6. Assist in reading food order tickets and organizing food items to be delivered to correct table numbers and seat positions.
  7. Determine if food items are prepared to standard and if not, speak to culinary to correct the dish before delivering to guest.
  8. Deliver to correct seat position at the table and explain food items to guests when delivering to guest table.
  9. Arrange plates according to the specific ticket and place on the serving tray with accompaniments to finalize tray for delivery to the guest.
Opening and Closing Duties:
  1. Complete opening side duties as assigned:
  2. Ensure a sufficient supply of all silverware, glassware, chinaware and linen for service.
  3. Polish silverware, glassware and china.
  4. Set up side station with supplies and equipment.
  5. Set up trash and linen receptacles and breakdown area.
Inn and Biltmore Standards and Procedures Knowledge/Execution:
  1. Grasp and maintain knowledge of table and seat numbers, section assignments, proper table set-up, hours of operation and dress code of the Restaurant.
  2. Maintain complete knowledge of and comply with all service procedures, established standards, company and departmental policies and procedures.
  3. Be familiar with all Inn services and features, Biltmore Estate activities and special events in order to respond to guest inquiries accurately.
  4. Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and intoxicated drivers. Escalate to supervision proactively on issues observed.
Physical Requirements:
  1. High School diploma or GED equivalency; ability to read instructions and basic counting skills for restocking activities; ability to remain attentive at all times to guest needs and experience in a Fine Dining restaurant
  2. Ability to: Quickly learn and follow Inn and Biltmore procedures. Perform job functions with attention to detail, speed and accuracy. Prioritize, organize and follow up. Follow directions thoroughly and proactively. Understand guest’s service needs. Be a clear thinker, remaining calm and resolving problems using good judgement. Work cohesively with co-workers as part of a team. Perform job functions with minimal supervision.
  3. Previous experience in a similar position is desirable, particularly in a fine dining or upscale restaurant.
