Job summary

Princess Cruises and Holland America Line is seeking a Cook, Line for our rail service aboard Alaska routes. You will prepare breakfast and lunch on the moving train, using local ingredients where possible, with elevated standards of quality and presentation.

The role requires teamwork, the ability to work in a fast-paced kitchen, and a commitment to safety and sanitation. Seasonal full-time employment with housing where available.

Qualifications

• Must obtain Alaska Food Handler Card.
• Ability to lift 50 lbs./23 kg and work around hot kitchen equipment.
• Ability to organize and prioritize work in a team or group environment.
• Ability to work in a fast-paced environment with multiple tasks and external influences.

Responsibilities

• Perform a variety of food preparation tasks for breakfast and lunch served on the train.
• Responsible for accurate inventories of all products in the assigned kitchen.
• Maintain ticket times during high volume, fast-paced meal service.
• Prepare employee meals, following all employee meal protocols while minimizing food waste and controlling portions.
• Follow end-of-day procedures including cleaning checklists, proper storage of products, and checkouts with supervisor or management.
• Routinely fill out logs and forms for time and temperature checks of food items, coolers, freezers, and sanitation buckets.
