Job summary

J H Routh Packing Company is seeking a 3rd Shift Smokehouse Operator to operate, monitor, and maintain smokehouse equipment ensuring product quality and regulatory compliance. You will handle loading/unloading, monitor cook cycles, document data, and coordinate with QA and maintenance teams.

The role requires English communication, basic math, and reliable attendance, with responsibilities including inspections, sanitation, and adherence to food safety standards in a fast-paced production

Responsibilities

• Operate smokehouse systems, loading and unloading product racks/trees.
• Monitor cook cycles, temperatures, humidity, and smoke levels to specs.
• Record weights, temperatures, cook times, and other production data.
• Verify product quality and report deviations to supervision.
• Perform pre-operational inspections and basic equipment checks.
• Maintain cleanliness and sanitation of equipment and area.
• Follow HACCP, food safety, and USDA requirements.
• Wear PPE and observe safety policies.
