Job summary

Lactalis American Group in Buffalo, NY is seeking a Dairy Machine Operator to run and clean multiple cheese production systems on a 3rd shift schedule. You will operate, sanitize, and troubleshoot equipment including molders, cookers, DMC, and brine systems while maintaining documentation.

This role emphasizes food safety, GMP compliance, and accurate record keeping in a continuous production environment. Associates degree preferred; high school diploma required; dairy experience welcome as you

Qualifications

Basic mathematical skills are required (must be able to calculate averages).
Attention to detail and accuracy in work required.
Strong communication abilities, written and verbal.

Responsibilities

Start-up, maintain sanitation, perform CIP, shutdown and operate machinery. Troubleshoot machinery when needed.
Monitors key processing indicators such as time, temperature, pH, moisture and weight.
Maintains production in a continuous flow operation.
In control of daily production and sanitation paperwork; fill it out properly and comment on any non‑compliance results.
Ensures Food Safety and Security per GMP and GSP policies and procedures.
Performs other duties as requested by the Mozzarella Production Supervisor.
Responsible for working efficiently and safely to produce a high quality product.
