Job summary

Grand Casino Mille Lacs is seeking a Full-Service Sous Chef to lead from the line and own execution standards in a premier dining environment. You will develop a high-performance kitchen culture and partner with the Executive Chef on menu vision, quality, and seasonal innovation.

You will manage food and labor costs, monitor inventory, and ensure compliance with health, safety, and gaming regulations. A strong leadership presence and a passion for culinary craft are required.

Qualifications

  • 5+ years of progressive culinary experience, including 3+ years in a leadership or supervisory role.
  • Deep understanding of full-service dining operations and kitchen systems.
  • Serv-Safe Certification preferred (required within 1 year).
  • Alcohol Awareness Certification (or ability to obtain within 2 months).
  • Proven ability to lead teams, drive quality, and deliver under pressure.
  • Must be able to secure a license from Gaming Regulatory Authority (GRA).
  • Mille Lacs Band Member and American Indian preference will be exercised in the hiring process.
