Qualifications

• Proven experience as Head Chef or Specialist Chef in North Indian cuisine.
• Extensive Tandoor cooking experience and marination techniques.
• Knowledge of food safety regulations (SFA Singapore).
• Leadership to manage a fast-paced, hot kitchen.

Responsibilities

• Culinary leadership: design authentic seasonal North Indian menus including Tandoor items.
• Tandoor expertise: manage clay ovens and cook meat, fish, breads.
• Operational management: oversee daily kitchen, mise-en-place, inventory control, food prep.
• Quality & Hygiene: enforce hygiene and safety regulations ensuring presentation.
• Staff management: train, supervise, mentor kitchen staff.
• Cost control: monitor food and labor costs, manage suppliers, minimize waste.
