Job summary

DJDH Ramen Restaurant, a unit under WAGEWORTH PTE. LTD., is seeking a genuine fresh graduate from culinary school for an entry-level kitchen trainee position.

You will receive direct, hands-on training from the Chef-Owner and progress through a structured culinary development programme in a fast-paced kitchen. The role emphasises cleanliness, food safety, discipline, and learning the fundamentals of broth, tare, aroma oil, toppings and ramen assembly.

Qualifications

• Fresh graduate from a recognised culinary school or culinary programme.
• Culinary certificate, Nitec, Higher Nitec, diploma or equivalent culinary qualification.
• Strictly zero years of post-graduation or full-time commercial kitchen experience.
• WSQ FSC Level 1 certification or higher required before starting food-handling duties.
• Willing to begin with foundational cleaning, sanitation, preparation and kitchen-discipline training.

Responsibilities

• Receive direct culinary training and mentorship from the Chef-Owner.
• Follow DJDH Ramen’s structured culinary development programme.
• Maintain exceptional personal hygiene, kitchen cleanliness and food-safety standards.
• Practice strict "clean as you go" discipline throughout every shift.
• Perform opening, closing and scheduled deep-cleaning duties.
• Clean and sanitise kitchen equipment, workstations, utensils and storage areas.
• Follow proper food receiving, storage, labelling, dating and temperature-control procedures.
• Apply FIFO/FEFO stock-rotation practices.
• Prevent cross-contamination and follow allergen-control procedures.
• Complete food-safety, temperature, cleaning and preparation records accurately.
• Assist with basic mise en place and ingredient preparation.
• Progressively learn broth, tare, aroma oil, toppings and ramen preparation.
• Learn correct noodle timing, portioning, assembly and plating.
• Follow standard recipes and presentation requirements consistently.
• Assist with stock-taking, inventory control and food-wastage reduction.
• Support all kitchen operations as part of a small and closely coordinated team.
• Perform other reasonable kitchen duties assigned by the Chef-Owner
