Qualifications

OVERVIEW

The Pastry Chef is responsible for leading and elevating the resort’s pastry program, creating an exceptional guest experience defined by precision, elegance, innovation, and contemporary French craftsmanship. This role embodies the highest standards of luxury hospitality by transforming classical French pastry techniques into modern, artistic creations executed with consistency, creativity, discipline, and meticulous attention to detail.
Must have an exceptional technical foundation in classical French pastry, developed through experience in luxury hotels, Michelin-starred restaurants, or internationally recognized pâtisseries. A passion for innovation, uncompromising quality, and flawless execution is essential.
Advanced expertise in chocolate artistry, including showpieces, fine confectionery, bonbons, pralines, and signature chocolate creations, is required. Strong expertise in ice cream, French pastry techniques is essential.
The Pastry Chef will oversee all pastry operations across the resort, including signature restaurants, afternoon tea, breakfast, banquets and events, in-room dining, retail offerings, and bespoke guest experiences. The role is responsible for creating a cohesive and elevated dessert identity that reflects the resort’s luxury positioning and culinary philosophy.

Key Responsibilities
  • Lead the development and execution of a world-class pastry program encompassing plated desserts, afternoon tea, entremets, petits fours, chocolates, ice cream, plating desserts, and premium confectionery.
  • Direct a contemporary French pastry program rooted in classical techniques while embracing modern presentation, innovation, and refined artistry.
  • Create signature dessert experiences showcasing balance, texture, seasonality, precision, and exceptional craftsmanship.
  • Ensure outstanding quality, consistency, and presentation standards across all pastry offerings throughout the resort.
  • Produce and continuously refine iconic French pastry creations including ice cream and specialty chocolate creations.
  • Develop innovative pastry concepts while preserving classical foundations and establishing a distinctive dessert identity aligned with the luxury brand.
  • Oversee all chocolate production, decorative chocolate artistry, showpieces, bonbons, pralines, and premium confectionery to international standards.
  • Collaborate closely with the Director of Culinary Operations to develop concepts, menus, and operational strategies during pre-opening and ongoing operations.
  • Ensure pastry offerings consistently align with luxury brand standards and culinary objectives.
  • Work closely with Food & Beverage leadership to integrate pastry experiences seamlessly into the overall guest journey.
  • Oversee production planning, mise en place organization, service execution, quality assurance, and presentation standards across all outlets.
  • Develop seasonal menus, festive collections, special occasion offerings, and personalized VIP amenities.
  • Establish and maintain standardized recipes, production schedules, SOPs, and quality control procedures.
  • Ensure strict compliance with HACCP principles, food safety regulations, hygiene requirements, and sanitation standards.
  • Manage food cost, labor productivity, inventory control, purchasing, portion management, and waste reduction while maintaining premium quality.
  • Recruit, train, mentor, and inspire a high-performing pastry team, fostering excellence, creativity, discipline, and continuous professional growth.
  • Support pre-opening activities including kitchen planning, workflow optimization, equipment selection, supplier evaluation, product sourcing, and operational preparation.
  • Conduct tastings, menu trials, product evaluations, and service simulations to ensure operational readiness.
  • Maintain consistently exceptional standards in taste, texture, appearance, and guest satisfaction.
  • Represent the resort’s pastry program during VIP events, media activities, culinary demonstrations, guest masterclasses, and promotional initiatives.
QUALIFICATIONS & EXPERIENCE
  • 8-10 years of professional pastry experience, including 4-5 years in a senior leadership role within a luxury hotel, Michelin-starred restaurant, or internationally recognized pâtisserie.
  • Extensive expertise in classical French pastry and contemporary pastry techniques.
  • Mastery of plated desserts, chocolate artistry, confectionery, and ice cream production.
  • Demonstrated ability to create innovative dessert concepts while maintaining technical precision and classical discipline.
  • Previous luxury hospitality pre-opening experience is highly desirable.
  • Formal pastry education from a recognized culinary institution or equivalent professional experience.
  • Strong financial understanding, including food cost management, budgeting, labor planning, inventory control, and operational performance.
  • Comprehensive knowledge of HACCP, food safety regulations, sanitation procedures, and quality assurance systems.
  • Exceptional leadership, coaching, and team development skills with experience managing multicultural teams.
  • Excellent organizational, communication, and problem-solving abilities within a fast-paced luxury environment.
