Job summary

NOVOTEL Medina is seeking an experienced Garde Manger Chef to lead our cold kitchen, crafting salads, canapés and plated cold dishes with a focus on quality, presentation and consistency.

You will uphold HACCP and hygiene standards in a busy hotel kitchen, collaborate with the culinary team, and assist with events, buffets and menu development while maintaining high standards and ensuring timely service.

Qualifications

• Previous experience as a Garde Manger Chef or in a similar cold kitchen position.
• Strong knowledge of cold food preparation, salads, sauces, and presentation.
• Good understanding of food safety, HACCP, hygiene, and sanitation standards.
• Strong attention to detail and presentation.
• Ability to work efficiently in a busy hotel kitchen environment.
• Good teamwork and communication skills.
• Ability to work under pressure and meet operational deadlines.
• Experience in hotel operations, particularly in Makkah, will be considered an advantage.
• Culinary qualification or relevant professional training is preferred.

Responsibilities

• Prepare and present high-quality garde manger items including salads, appetizers, canapés and dressings.
• Ensure all dishes follow approved recipes, portion controls and presentation standards.
• Maintain consistent quality, freshness and plating across cold kitchen outputs.
• Assist with banquet setups, events and special functions as required.
• Maintain proper food storage, labeling, rotation and temperature control.
• Uphold HACCP, health, hygiene and hotel SOPs at all times.
• Coordinate with other kitchen sections to ensure smooth service.
• Support senior chefs with menu prep and new dish development when needed.
• Keep workstation clean and organized and monitor cleanliness of equipment.
