Overview

Miramis is part of the Swedish holding Qarlbo AB. The Miramis launch portfolio includes iconic properties in southern Tuscany, about an hour from Rome: Hotel La Roqqa and Isolotto Beach Club in Porto Ercole, Hotel Torre di Cala Piccola in Porto Santo Stefano, and Fattoria La Capitana in Magliano in Toscana. Additionally, within urban regeneration projects, a new hotel facility is planned in the area of the former Cirio factory in Porto Ercole.

Position: We are looking for a Chef de Partie / Cuoco/a senior for our Isolotto Beach Club, who reports directly to the Head Chef.

Role and mission at Miramis: As Chef de Partie, you will be a key figure in ensuring excellence in our catering services. You will organize and supervise your section, ensuring that every dish reflects the highest standards of quality and creativity of our high-end kitchen. You will have the opportunity to nurture your passion for cooking, collaborating in the creation of new menus and actively contributing to the development of our local gastronomic offering.

Responsibilities

Qualifications

Hard Skills

  • 3-4 years of experience in luxury, fine dining, Michelin-starred kitchens, or 5* hotel environments, including at least 1 year as Chef de Partie;
  • Diploma from a culinary school or equivalent;
  • Strong command of classic and contemporary cooking techniques within your station (starters, first courses, mains, etc.);
  • Deep knowledge of HACCP regulations, safety, and allergen management;
  • Excellent organizational skills and autonomous management of time and resources within the station;
  • aesthetical plating and decoration skills;
  • Proficiency in preserving and rotating ingredients (FIFO);
  • Basic food cost management.

Soft Skills

  • Reliability and sense of responsibility;
  • Team spirit with willingness to grow together with others, with mentoring and training of junior staff;
  • Calm handling of stressful situations;
  • Attention to aesthetic and qualitative detail;
  • Passion and curiosity for culinary innovation, openness to discussion, learning, and continuous improvement;
  • Excellent communication skills, including in multicultural contexts.
