Job Description

Our plonge stewards are essential to provide high‑quality guest satisfaction. They maintain cleanliness of dishware, equipment, and tools used in restaurants, bars, events, banqueting, SPA, and rooms/suites. Professionalism is crucial to raise standards in all F&B outlets.

Key Responsibilities

  • Operate and maintain cleaning equipment and tools, including dishwashing machines, hand wash stations, pot‑scrubbing stations, and trash compactors.
  • Monitor operating supplies and reduce spoilage and wastage.
  • Ensure cleaning activities of all dishware, cutlery, glasses, pots, and pans according to performance standards.
  • Inspect, pull, and stack cleaned items, constantly checking if any need re‑scrubbing or re‑washing.
  • Rack and spray all racked items with hot water to loosen and remove food residue; sort, soak, and wash/re‑wash silverware.
  • Ensure cleaned wares are stored in appropriate areas and dispose of glass in proper containers, following quality procedures.
  • Wash and disinfect kitchen and other department areas, tables, tools, knives, bins and equipment.
  • Support warehouse activities such as receiving deliveries, storing perishables properly, and rotating stock.
  • Maintain proper storage and use of chemicals and detergents.
  • Breakdown dirty bus tubs and manage them according to garbage schedules.
  • Empty and maintain trash cans and dumpster area.
  • Break down cardboard boxes and place recyclables in the recycle bins.
  • Assist in carrying out periodical inventory of operating equipment.
  • Assist with setup of function requests such as plate orders.
  • Follow all hotel policies, procedures and service standards, including HACCP and health & safety procedures.
  • Attend training courses.

Qualifications

  • Thorough understanding of cleaning procedures, use of dishwashing machines and appropriate chemicals.
  • Clear understanding of HACCP procedures and their purpose.
  • Awareness of OH&S policies and procedures.
  • Good communication skills.
  • Strong attention to detail and organization skills.
  • Knowledge of hotel restaurants’ quality standards.
  • Flexibility, adaptability and ability to work under pressure while maintaining timelines and quality.
  • Good knowledge of Italian; English confidence is a plus.
  • Legal right to work in Italy.
