Job summary

Aman Group's Amanpulo on Pamalican Island, Palawan invites a Head Chef for the Japanese restaurant. Lead culinary operations, develop authentic cuisine, oversee sourcing and presentation, and mentor kitchen staff in a luxury paradise known for privacy and premium experiences.

The role requires 3-5 years in a luxury setting, strong kitchen management skills, and excellent English. Prior Micros knowledge for costings is essential.

Qualifications

• 3-5 years experience in a similar role within luxury hospitality.
• Strong knowledge of kitchen operations and management.
• Excellent command of English (written and spoken).
• Proficiency with Micros for menu costing and inventory management.
• Ability to lead and motivate a diverse team in a fast‑paced setting.
• Commitment to cleanliness, organization and high standards.

Responsibilities

• Plan and direct daily food preparation and service in the Japanese kitchen.
• Expedite and relay orders to subordinates, ensuring teamwork.
• Assist Exec Chef in menu compilation and full menu knowledge.
• Maintain food standards as set by Exec Chef.
• Ensure produce consistency and proper labeling/temperature controls.
• Support management to meet labor and food cost targets; identify profitability improvements.
• Communicate business information clearly to the team.
• Help develop junior chefs through training and guidance.
