Job summary

Mercure Amsterdam City is seeking a hands-on Food & Beverage Manager to lead the overall F&B experience across restaurants, bar, terrace and meeting facilities, ensuring seamless operations, guest satisfaction and strong business performance.

You will lead a leadership team including three F&B Supervisors and the Executive Chef, developing the team, driving financial results, and upholding health and safety standards as part of the Hotel Management Team.

Qualifications

• 3+ years in a leadership role within Food & Beverage.
• Bachelor-level working and thinking ability.
• Proven experience managing and developing teams in hospitality.
• Fluency in Dutch and English, spoken and written.

In this position, you will be fully responsible for one of the hotel's largest departments, leading both the service and culinary teams through an experienced leadership team consisting of three F&B Supervisors, an Executive Chef and two Sous Chefs.

At Mercure Amsterdam City, we are looking for a hands-on and inspiring Food & Beverage Manager who will lead our F&B operation and play a key role within the hotel's Management Team.

Job Description

What you will be doing

As Food & Beverage Manager, you will be responsible for the overall Food & Beverage experience within the hotel. You will oversee our restaurants, bar, terrace and meeting facilities, ensuring seamless operations, excellent guest satisfaction, and strong business performance.

In this role, you will:

• Lead, inspire and develop the F&B team, creating a culture of engagement, accountability and excellence.
• As Head of the F&B department, you will directly manage a leadership team consisting of three F&B Supervisors (Rob, Freek and Alan) and the Executive Chef (Pascal). Together with two Sous Chefs (Rob and Andre), you will build a high-performing team culture focused on quality, collaboration, innovation and guest satisfaction.
• Be a visible presence on the floor, supporting the team and ensuring an exceptional guest experience.
• Drive operational quality and service standards across all F&B outlets.
• Monitor and optimize financial performance, productivity and profitability.
• Ensure efficient workforce planning and talent development.
• Collaborate closely with other department heads as an active member of the Hotel Management Team.
• Identify opportunities to improve guest satisfaction, increase revenue and strengthen operational performance.
• Coach and empower your team through continuous feedback and on-the-job development.
• Ensure compliance with all health, safety and Mercure brand standards.

You are an experienced hospitality professional who combines a strong operational foundation with excellent leadership skills. You know how to motivate people, drive performance and create an environment where both guests and employees feel valued.

You remain calm under pressure, are able to manage multiple priorities, and know how to bring people along with your vision and enthusiasm. Most importantly, you lead by example and genuinely enjoy developing others.

Your experience and skills include:

• At least 3 years of experience in a leadership role within Food & Beverage.
• Bachelor-level working and thinking ability.
• Proven experience managing and developing teams in a hospitality environment.
• Strong leadership and coaching skills.
• Commercial awareness and a results-driven mindset.
• Excellent organizational and communication skills.
• A hands-on mentality with a passion for guest satisfaction.
• Fluency in both Dutch and English, spoken and written.
• Hotel experience is considered a strong advantage.
