Job summary

Fairfield by Marriott Kota Kinabalu seeks an experienced Kitchen Manager to lead daily culinary operations and uphold high standards of food quality and safety. You will oversee staff, manage budgets, and ensure a consistent guest experience in a busy hotel kitchen.

The role requires strong leadership, menu development, and hands-on cooking to guide the team and deliver excellent service to guests at Kota Kinabalu’s Fairfield property.

Qualifications

• High school diploma or GED with 4 years in culinary/F&B.
• Or a 2-year degree in Culinary Arts, Hotel and Restaurant Management with 2 years of related experience.
• Experience leading kitchen staff and maintaining sanitation standards.

Responsibilities

• Prepares and cooks foods of all types for regular or special functions.
• Reviews and optimizes kitchen procedures to improve effectiveness.
• Develops menus and recipes that meet standards.
• Supervises kitchen shift operations and ensures compliance with F&B policies.
• Maintains purchasing, receiving, and storage standards.
• Ensures sanitation and food safety standards are met.
• Leads and develops staff and provides coaching.
