Job summary

Regent Kuala Lumpur is seeking an Executive Sous Chef to lead culinary operations for the pre-opening phase. This full-time on-site role requires strong leadership to build a capable team and deliver exceptional dining experiences.

You will work closely with the Executive Chef on menu development, food cost control, and safety standards while guiding staff through high-profile events and daily service.

Qualifications

• Degree or vocational certificate in Culinary Arts or a related field.
• Minimum 8 years of kitchen experience, including 4+ years in a supervisory role.
• Strong knowledge of menu engineering, food cost control, and kitchen safety/hygiene standards.

Responsibilities

• Develop training plans and materials with Training Manager for Food Production and F&B staff.
• Recruit, select and develop chefs to build multi-skilled, cross-functional teams.
• Delegate duties while maintaining operational and safety standards.
• Monitor morale, provide regular feedback, and conduct annual performance appraisals.
• Foster strong relationships across departments through professional communication.
• Support the Executive Chef in budgeting and cost control for the department.
• Oversee menu design, portions and quality across outlets and events.
