Job Summary
We are looking for a dedicated and detail-oriented Food Service Dietitian to oversee the planning, implementation and monitoring of food service operations within the hospital. The successful candidate will ensure that therapeutic meals are prepared accurately according to prescribed diets, while maintaining the highest standards of food safety, quality, nutrition and operational efficiency.
The Food Service Dietitian will work closely with kitchen personnel, catering officers, food service supervisors and healthcare professionals to deliver safe, nutritious and high-quality meals to patients.
Key Responsibilities of Food Service Operations
- Plan, coordinate and supervise daily food service operations.
- Ensure timely production and distribution of patient meals.
- Monitor workflow efficiency within the kitchen.
- Supervise meal plating, trayline operations and meal dispatch.
- Ensure all patient meals are prepared according to prescribed therapeutic diets.
- Investigate and resolve food service-related issues and patient complaints.
Therapeutic Diet Management
- Translate diet orders into appropriate therapeutic meal plans.
- Verify the accuracy of diet slips before meal production.
- Ensure therapeutic diets comply with Ministry of Health standards and hospital policies.
- Monitor special diets including texture-modified diets, diabetic diets, renal diets, low-sodium diets and other therapeutic diets.
- Conduct routine audits to ensure diet accuracy before meal distribution.
- Develop and review hospital menus.
- Standardise recipes and portion sizes.
- Ensure menus meet nutritional standards and budget requirements.
- Monitor patient meal acceptance and recommend menu improvements.
- Participate in new recipe and menu development.
HACCP, Food Safety & Quality Assurance
- Implement and monitor HACCP programmes.
- Conduct routine food safety inspections.
- Monitor Critical Control Points (CCPs) and ensure corrective actions are taken when necessary.
- Ensure compliance with GMP, GHP and food hygiene regulations.
- Verify food temperatures during receiving, storage, cooking, holding and serving.
- Monitor documentation for food safety records.
- Participate in internal and external food safety audits.
- Supervise kitchen hygiene and sanitation practices.
- Ensure compliance with Standard Operating Procedures (SOPs).
- Monitor receiving, storage and inventory practices.
- Verify food quality upon receiving.
- Assist in inventory planning and food wastage reduction initiatives.
Halal Compliance
- Ensure all food preparation complies with Halal requirements.
- Monitor segregation of Halal materials and equipment.
- Support internal Halal audits and documentation.
- Participate in Halal awareness programmes.
Staff Supervision & Training
- Train kitchen personnel on therapeutic diets, food safety and hygiene.
- Conduct competency assessments.
- Coach staff on standard recipes and portion control.
- Monitor staff compliance with departmental SOPs.
- Participate in staff performance improvement initiatives.
Quality Improvement
- Conduct meal quality evaluations.
- Analyse food wastage and recommend improvements.
- Participate in departmental quality improvement projects.
- Assist during Ministry of Health inspections and accreditation programmes.
Documentation & Reporting
- Maintain accurate food service records.
- Prepare operational reports and audit findings.
- Maintain menu costing and production records.
- Ensure documentation complies with departmental requirements.
RequirementsEducation
- Bachelor's Degree in Dietetics or equivalent recognised qualification.
- Registered with the Malaysian Allied Health Professions Council (MAHPC).
Experience
- Fresh graduates are encouraged to apply.
- Experience in hospital food service, institutional catering or large-scale food production is an added advantage.
- Experience with HACCP, GMP and food safety systems is preferred.
Knowledge & Skills
- Strong knowledge of therapeutic diets.
- Knowledge of hospital food service operations.
- Understanding of HACCP, GMP, GHP and food safety systems.
- Knowledge of Halal food management is an advantage.
- Good menu planning and recipe standardisation skills.
