The bakery shop team is responsible for the smooth and efficient operation and control of daily bakery production in accordance with company policies. Key responsibilities include:
Managing the production, quality, and presentation of bread assortments for daily menus.
Assisting the Head Baker in preparing production forecasts and recording leftovers to minimize waste and control food costs.
Setting up bread displays for various buffets.
Maintaining complete knowledge of and ensuring compliance with United States Public Health (USPH) rules and regulations.
Ensuring the bakery shop is cleaned according to the Executive Chef’s schedule, using proper methods to prevent equipment damage.
Preparing the bakery for USPH inspections, whether announced or unannounced, by ship management or USPH inspectors.
Requisitioning and transporting necessary items from main stores to the bakery when assigned.
Following company standards for recipes and yields.
Assisting the CDP Baker with completing daily consumption reports for the Executive Chef.
Understanding and/or acquiring knowledge to comply with ship’s standard operations and assist guests and crew inquiries.
Attending meetings, training, courses, and other work-related activities as required.
Performing related duties as needed, including any other job-related tasks assigned by supervisors or management.
Qualifications
Minimum of three years' experience as a Baker in an upscale hotel, resort, cruise ship, or banqueting service; shipboard experience preferred.
Knowledge of proper cleaning techniques, equipment requirements, and usage.
High school diploma or equivalent education required.
