Job summary

Newly Weds Foods is seeking a senior R&D professional to lead coating and breading formulation programs. You will drive development from concept to scale-up, optimize processes, and coordinate trials across pilot to production. The role also covers testing, sensory work, and technical support for customers and audits.

You will mentor junior scientists and collaborate with Sales and BD to deliver innovative coating solutions that meet market trends and business goals.

Qualifications

• 10-15 years of experience in food product development and application, with coating and breading as core expertise.
• Hands-on development of coatings, breaders, batters, seasonings, snacks, or related ingredients.
• Proven ability to lead formulation development, scale-up, and commercial launches.

Responsibilities

• Develop, optimize, and lead coating/breading formulation work with coating ownership.
• Support seasoning and culinary product development as secondary areas.
• Conduct lab trials, sensory evaluations, and benchmarking studies.
• Plan pilot/production-scale trials and lead scale-up to commercialization.
• Provide technical support to customers, audits, and cross-functional teams.
• Create formulation records, SOPs, and ensure GMP/HACCP/BRCGS/FSSC compliance.

Role & responsibilities

Product Development & Formulation (Coating Major Focus)

• Independently develop, optimize, and lead formulation work for coatings, breaders, breadcrumbs, batter systems, and performance ingredients, with Coating as the primary area of ownership.
• Support and contribute to formulation development for seasonings and culinary products as a secondary area of responsibility.
• Conduct laboratory research, product development trials, and sensory evaluations across coating and related product lines.
• Develop new coating and breading products based on customer requirements, market trends, and business objectives.
• Identify opportunities for product enhancement, cost optimization, and process improvement within the coating portfolio.
• Conduct benchmarking studies on competitive coating products and recommend improvements.

Product Testing & Commercialization

• Plan and execute laboratory, pilot plant, and production-scale trials for coating and breading systems.
• Lead scale-up activities from laboratory development to commercial manufacturing for coating products.
• Evaluate product functionality, shelf life, stability, sensory attributes, and processing performance.
• Prepare trial reports, technical evaluations, and recommendations for commercialization.
• Support manufacturing teams during initial production and product launch phases.

Customer Technical Support

• Support customers with coating and breading product applications, troubleshooting, and process optimization.
• Participate in customer visits and product demonstrations as required.
• Conduct application trials to validate coating product performance in customer production environments.
• Collaborate with Sales and Business Development teams to provide technical solutions and support customer growth.

Documentation & Compliance

• Create and maintain formulation records, specifications, product development reports, and technical documentation for coating and other assigned categories.
• Prepare and review SOPs, work instructions, and department procedures.
• Ensure all products comply with applicable food regulations, customer requirements, and company standards.
• Maintain compliance with Food Safety and Quality Management Systems, including GMP, HACCP, BRCGS, and FSSC 22000 requirements.

Process Improvement & Innovation

• Stay updated on emerging food technologies, ingredients, market innovations, and industry trends in coating and breading systems.
• Recommend new ingredients and technologies to strengthen the coating product portfolio.
• Participate in innovation initiatives and strategic product development projects.
• Support cost-reduction and value-engineering programs while maintaining product quality and performance.

Team Collaboration & Mentoring

• Provide technical guidance and mentorship to Junior Scientists and R&D Technicians, particularly on coating and breading systems.
• Assist Head R&D in training and developing technical team members.

Additional Responsibilities

• Travel to manufacturing plants and customer locations as required.
• Support internal and external audits related to R&D activities.
• Perform any additional duties assigned by Head R&D or Country Manager.

Preferred candidate profile

• 10-15 years of experience in food product development and application, with Coating & Breading Systems as the major area of expertise.
• Strong hands-on experience in coatings, breading systems, batter systems, seasonings, culinary products, snacks, meat processing, or ingredient manufacturing.
• Proven experience in independently leading formulation development, scale-up, and commercial product launches for coating products.
• Experience mentoring or guiding junior R&D team members is preferred.
