Role Purpose Statement

Person should be an expert in development of cake premixes and provide support in the development of cake premixes, egg‑free and egg‑based premix. They should have sound technical knowledge of each bakery ingredient and the functional role of each ingredient in the formulation. They should be able to provide technical solutions in cake premixes – i.e., cracking in cake, dip in volume, crumbling in cake, etc.

Main Accountabilities

• Define the problem and identify the root cause of issues in cake premixes.
• Identify the root cause of the problem, whether it is ingredient, process or application.
• Provide cost‑effective solutions.
• Scale up the product from lab development to commercial scale.

• Travel to market and plant as required to solve issues.

• Well‑versed with Indian Food Laws such as FSSAI, FPO, and working knowledge of international laws such as FAO, WHO, EU legislations, Codex, etc.
• Good knowledge of food safety aspects and process controls.

Education & Experience

• Bachelor’s degree or equivalent in Food Science/Technology, Chemistry, Physics, or related disciplines is a requirement. MS is preferred.
• At least 10 years of experience in the food ingredient industry, especially in cake premix.
• Extensive knowledge and experience with cake premix in the food industry and ability to support customers with all their technical needs and questions.
• Experience developing cake premixes and providing technical solutions to the industry.
