About Jean-Georges at The Leinster

We are seeking an experienced, passionate and ambitious Sous Chef to join our team at Jean-Georges at The Leinster, our Michelin-commended rooftop restaurant in the heart of Dublin.

Jean-Georges at The Leinster forms part of an internationally celebrated collection of restaurants, with destinations spanning New York, London, Las Vegas, Venice, Kuala Lumpur and beyond.

Our culinary philosophy is rooted in classical French cuisine, reimagined through a contemporary lens with global influences. We place enormous importance on the quality of our ingredients, working with exceptional Irish producers and sourcing the very best seasonal produce available.

Our kitchen is home to a talented, cosmopolitan team of culinary professionals from Ireland, France, Denmark, Italy, Hong Kong, Mexico and beyond. We bring together different cultures, experiences and culinary backgrounds, united by a shared passion for exceptional food and hospitality.

We offer an exciting opportunity to develop your career in an ambitious, internationally recognised restaurant, working alongside a talented team committed to delivering the highest standards.

This position operates on a four-day working week, offering an excellent opportunity to achieve a better work-life balance while continuing to develop your career in a high-end culinary environment.

The Role

As Sous Chef, you will play a key leadership role within our kitchen brigade, working closely with the Executive Chef and senior culinary team to maintain the exceptional standards expected of Jean-Georges.

This is a hands-on leadership position requiring a strong culinary foundation, exceptional attention to detail and a genuine enthusiasm for food.

We are looking for someone who takes pride in their craft, enjoys working with exceptional ingredients and understands the importance of consistency, precision and teamwork in a fine-dining environment.

The successful candidate will help drive daily kitchen operations, support the development of our chefs and contribute to the continued evolution and success of the restaurant.

Key Responsibilities

Culinary Excellence & Menu Execution

  • Maintain the highest standards of food preparation, cooking, presentation and consistency across all sections.
  • Ensure dishes are executed precisely in accordance with Jean-Georges recipes, specifications and presentation standards.
  • Lead by example during service, maintaining a calm, organised and professional kitchen environment.
  • Work closely with the Executive Chef and senior team on seasonal menu development, new dishes and culinary innovation.
  • Demonstrate a genuine appreciation for exceptional ingredients, classical techniques and contemporary cooking.

Kitchen Operations & Service

  • Oversee daily kitchen preparation, organisation and service readiness.
  • Ensure all sections maintain exceptional standards of mise-en-place and kitchen organisation.
  • Coordinate effectively with the restaurant and front-of-house teams to deliver a seamless guest experience.
  • Maintain the highest standards of cleanliness, food safety and HACCP compliance.
  • Support the efficient operation of the kitchen while maintaining our commitment to quality.

Leadership & Team Development

  • Inspire, motivate and support our diverse international kitchen brigade.
  • Assist in training, mentoring and developing junior chefs, encouraging professional growth and culinary excellence.
  • Promote a positive, respectful and collaborative working environment.
  • Take responsibility for kitchen operations and service in the absence of senior management.
  • Encourage a culture of professionalism, creativity, accountability and continuous improvement.
  • Assist with purchasing, ordering and stock management, ensuring the highest quality ingredients are consistently available.
  • Maintain effective portion control, stock rotation and waste management.
  • Support food costing and gross profit management without compromising culinary standards.
  • Ensure compliance with food safety, allergen management and kitchen operating procedures.
About You

We would love to hear from chefs who are genuinely passionate about food and eager to develop their careers in an ambitious, internationally recognised restaurant.

Ideally, you will have:

  • Previous experience in a high-end restaurant, fine-dining kitchen or luxury hotel environment.
  • A strong understanding of classical French cooking techniques and an appreciation for modern, internationally influenced cuisine.
  • Exceptional attention to detail and a commitment to quality and consistency.
  • Strong leadership, communication and organisational skills.
  • A genuine interest in exceptional ingredients, seasonal produce and contemporary food culture.
  • The ability to remain calm, focused and professional during busy services.
  • A positive attitude, strong work ethic and enthusiasm for developing those around you.
  • Sound knowledge of HACCP, food safety and kitchen management.
