Job summary

Talbot Hotel Clonmel is recruiting a full-time Sous Chef to join our team. You will supervise kitchen staff in the Head Chef’s absence, prepare and present dishes, and ensure HACCP controls are followed in line with legislation.

Qualifications

• Previous sous chef or similar experience in a 4* hotel environment.
• HACCP trained and hygiene focused.
• Professional appearance and a positive work attitude.

Responsibilities

• Supervise kitchen staff in Head Chef's absence.
• Prepare and present food for designated areas.
• Assist Head Chef with HACCP controls and paperwork.
• Maintain high standards of cookery as laid down by the company.
• Assist the Head Chef in training, developing and motivating the kitchen team.
• Create, update and implement departmental SOPs.
• Assist with menu reviews and costing.
