Job summary

Hollybank Trustees Ltd in Killacloyne, Co. Cork, is seeking an experienced Pastry Chef to join our growing bakery team.

This hands-on role requires pride in artisan baking and a keen eye for detail as you maintain our current range and help shape future products. You will work closely with the Head Baker and management to develop new pastries and seasonal menus, ensure HACCP compliance and high standards of quality, presentation and flavour, and mentor junior team members in a calm,

Qualifications

  • Minimum three years in an artisan bakery or professional pastry kitchen.
  • Experience in laminated pastries to high standard.
  • Strong dough handling, fermentation, proofing, and baking skills.
  • Experience with croissants, Danish pastries, focaccia, brioche, bagels, and soda bread.
  • Excellent organizational and time management skills.
  • Attention to detail and craftsmanship.
  • Ability to work under pressure while maintaining quality.
  • Experience mentoring junior team members.
  • Seasonal ingredients awareness.

Responsibilities

  • Produce high-quality laminated pastries including croissants, pain au chocolat, Danish pastries and seasonal specials.
  • Prepare and bake our range of artisan breads including focaccia, brioche, bagels and traditional brown soda bread to the highest standards.
  • Oversee dough production, fermentation, proofing and baking schedules to ensure consistency every day.
  • Maintain exceptional standards of product quality, presentation and flavour.
  • Develop and introduce new bakery and pastry products that celebrate seasonal ingredients and complement our existing range.
  • Keep up to date with emerging bakery and pastry trends, bringing fresh ideas and innovation to the business.
  • Work alongside the Head Baker and management team to develop new products and seasonal menus.
  • Ensure all food safety, HACCP and hygiene standards are consistently achieved.
  • Manage ingredients, stock rotation and production planning to minimise waste.
  • Support, mentor and encourage junior members of the bakery team.
  • Maintain a clean, organised and efficient bakery environment.

Pastry Chef

We are looking for an experienced, passionate and skilled Pastry Chef to join our growing bakery team.

This is a hands-on role for someone who takes genuine pride in artisan baking and pastry, with exceptional attention to detail and a passion for producing consistently outstanding products. You will play a key role in maintaining our existing range while helping shape the future direction of our bakery through creativity, innovation and a commitment to quality.

Key Responsibilities
