Job summary

Mount Juliet Estate in Thomastown, part of the Marriott Autograph Collection, seeks an exceptional Food & Beverage Manager for Hunter's Yard Hotel. You will lead all F&B outlets, drive guest satisfaction, and manage weddings, conferences and private events with a focus on luxury hospitality.

Reporting to senior leadership, you will develop SOPs, manage budgets and lead a high-performing team to deliver memorable dining experiences across the estate.

Qualifications

• Proven leadership experience within luxury hotels, premium hospitality or high-quality food and beverage operations.
• Experience leading conference, banqueting or large-scale event operations is highly desirable.
• Strong commercial awareness with experience managing budgets, labour costs, forecasting and financial performance.

Responsibilities

• Provide strategic leadership across Hunter's Yard Hotel F&B operations together with Jack's Bar at the Clubhouse, ensuring exceptional service delivery across every guest touchpoint.
• Lead the operational delivery of Conference & Banqueting food & beverage services, ensuring weddings, conferences and private functions meet luxury standards.
• Drive operational excellence across all outlets, maintaining consistency, efficiency and outstanding guest satisfaction.
• Work with the Executive Chef, Conference & Events Team, Golf Operations, Front Office and Senior Leadership Team to deliver seamless guest experiences.
• Develop and enhance departmental SOPs, service standards and operational procedures supporting excellence.
• Manage labour resources, scheduling, payroll and staffing while supporting budgets, revenue targets and profitability.
• Maintain compliance with company policies, licensing legislation and standards.
