Farnham Estate Spa & Golf Resort in Cavan is seeking a passionate Junior Sous Chef to join the dynamic kitchen team. You will support the Head Chef, lead the team during service, and ensure dishes meet high standards of presentation and quality.

We value HACCP knowledge, strong organisational skills, and the ability to work under pressure. Flexibility for evenings, weekends and public holidays is required; right to work in Ireland is essential.

Qualifications

• 2–3 years’ experience in a 4/5-star hotel or high-end restaurant.
• Previous experience as a Chef de Partie or Junior Sous Chef.
• Strong knowledge of HACCP, food safety and allergen management.
• Excellent food preparation, presentation and fine-dining standards.
• Proven ability to lead and motivate a kitchen team.
• Strong organisation and ability to work under pressure.
• Experience with stock control and minimising food waste.
• Flexible to work evenings, weekends and public holidays.
• Right to work in Ireland.

Responsabilités

• Assist the Head Chef with the day-to-day running of the kitchen.
• Lead and motivate the kitchen team during busy service periods.
• Ensure all dishes are prepared, cooked, and presented to a consistently high standard.
• Support menu preparation, recipe development, and daily specials.
• Monitor food quality, portion control, and presentation.
• Ensure all food safety, hygiene, and HACCP standards are strictly followed.
• Manage stock levels, deliveries, and proper food storage.
• Assist with ordering and minimise food waste and kitchen costs.
• Train, supervise, and support junior kitchen staff.
• Maintain a clean, organised, and efficient kitchen environment.
• Assist with staff rotas and ensure adequate kitchen coverage.
• Take responsibility for the kitchen in the absence of the Head Chef.
• Work closely with front-of-house staff to ensure smooth service.
• Maintain a positive, professional, and team-focused working environment.
