Job summary

Genesis Red Earth Limited T/A Red Earth in Mullingar, Co. Westmeath, Ireland, seeks an experienced wok chef for its kitchen. The role requires extensive restaurant kitchen experience and strong knowledge of Oriental recipes and preparation techniques.

You will work under the Head Chef to develop new dishes, maintain hygiene and HACCP standards, monitor portions, and ensure timely service while delivering high-quality Oriental cuisine.

Qualifications

• Must have extensive knowledge of and significant restaurant kitchen experience.
• Must be up to date with Oriental recipes and preparation techniques.
• Must be familiar with original Oriental foods and preparation methods.
• Must possess knowledge of best cooking practices.
• Must have at least 2 years restaurant kitchen experience.
• Must have an excellent command of the English language.
• Prior wok chef experience essential.
• Experience of bakery and dessert products essential.

Responsibilities

• Preparing, cooking and presenting oriental dishes in correspondence to the Head Chef’s vision, maintaining the Kitchen’s excellent reputation
• Assisting the Head Chef to develop new dishes and menus
• Monitoring portion and waste control to maintain profit margins
• Maintaining service levels and timing
• Ensuring HACCP Standards at all times
• Upholding order and discipline in the kitchen during working hours
• Ensuring the hygiene and food safety standards are met in all stages of food preparation
