Job summary

The O'Donoghue Ring Collection is inviting applications for Chef de Partie across three Killarney hotels: Killarney Towers, Killarney Plaza Hotel & Spa, and Killarney Avenue Hotel. You will work with a dynamic kitchen team to deliver high-quality dishes, lead junior staff, and uphold HACCP and safety standards in a fast-paced, guest-focused environment.

Fluent English and the right to work in Ireland are required, with a flexible schedule including weekends and holidays.

Qualifications

• Minimum previous experience as Chef de Partie in a 4-star hotel or equivalent kitchen
• Strong knowledge of HACCP and food safety procedures
• Excellent communication and teamwork skills

Responsibilities

• Prepare, cook and present high-quality dishes for your section
• Supervise and guide junior chefs, supporting development
• Uphold food hygiene and safety regulations and company standards
• Collaborate with Head and Sous Chef on menu development
• Manage mise en place and stock rotation to minimise waste

About The Role

As Chef de Partie, you will play a key role in delivering high-quality dishes that consistently exceed guest expectations. You will work closely with our culinary leadership team to maintain the high standards of our kitchen, support junior staff, and contribute to the ongoing innovation of our food offering.

Key Duties And Responsibilities

• Prepare, cook and present high-quality dishes across your designated section.
• Supervise and guide Commis and Demi Chefs, supporting their development and ensuring consistent performance.
• Uphold all food hygiene and safety regulations, including HACCP, and ensure your section operates in line with company standards.
• Collaborate with the Head and Sous Chef on menu development, offering seasonal, creative, and cost-effective suggestions.
• Manage mise en place for your section, ensuring readiness for each service.
• Monitor stock levels, assist with ordering, and apply correct stock rotation practices to minimize waste.
• Maintain a clean, organized, and safe working environment at all times.
• Take part in regular kitchen briefings, training sessions, and team meetings.
• Be adaptable to a flexible schedule that includes weekends and holidays based on business needs.

About You

• Previous experience working as a Chef de Partie in a 4-star hotel or similar high-standard kitchen is essential.
• Strong knowledge of HACCP and food safety procedures.
• Excellent communication skills and the ability to work well in a fast-paced team environment.
• Strong attention to detail and pride in food presentation and consistency.
• Fluent English is required.
• Candidates must have a legal right to work in Ireland.
