IKAT CACAO in Flores, Indonesia, is seeking a Head of Chocolate Production to build and lead our chocolate production from beans to finished products on site. You will take ownership of the entire process, from incoming cacao to packaging, and establish reliable standards for quality and consistency.

This hands-on leadership role requires developing the production team, planning shifts, documenting SOPs, overseeing equipment, and guiding product development through trials and sensory evaluation

Qualificações

• At least five years of professional, hands-on experience in chocolate production.
• Strong practical knowledge of chocolate-making processes, equipment and quality control.
• Experience leading a production team and training staff.
• Structured approach to documentation, problem-solving and maintaining product quality.
• Willingness to relocate to Flores and work on site.

Responsabilidades

• Lead chocolate production from goods receipt through roasting, milling, refining, conching, tempering, moulding and packaging.
• Plan production and shifts, supervise daily operations, and train and support the production team.
• Establish and document clear standard operating procedures, quality checks and repeatable production standards.
• Operate and oversee production equipment, identify process problems and work with the team to resolve them.
• Develop new chocolate products and improve existing ones through structured trials and sensory evaluation.
• Contribute practical production expertise as we refine the facility layout and scale the operation.
