Job summary

Raffles Bali seeks an experienced Pastry Chef to lead daily production of pastries, breads, desserts, and confections for all outlets and events. Qualifications

• Diploma or degree in Culinary Arts, Baking & Pastry or related field.
• Additional certifications (e.g., HACCP, food safety) are mandatory.
• Minimum of three years of experience as Pastry Chef in a luxury five-star setting.
• Expertise in plated desserts and dessert buffet presentation.
• Strong leadership and team management abilities.

Responsibilities

• Produce and oversee daily pastry and bakery production for restaurants, room service, lounges, and events.
• Create refined, innovative pastries and desserts reflecting Raffles' luxury positioning and local culture.
• Ensure all products meet recipes, quality standards, safety, and HACCP requirements.
• Plan mise en place, production schedules, and staffing according to demand.
• Lead, train, and assess pastry team, ensuring high standards and professional development.
• Collaborate with Executive Chef and F&B teams on seasonal menus and special events.
• Monitor cost, yield, and storage while maintaining luxury quality.
