Job summary

Meliá Hotels International in Jakarta is seeking a Head Chef to lead all kitchen operations at our luxury property, ensuring high-quality standards, staff leadership, and cost control.

The role requires strong knowledge of Spanish cuisine, English fluency, and experience in upscale hotel or destination restaurants; you will plan shifts, supervise food prep, mentor the team, and uphold HACCP and hygiene goals.

Qualifications

• 3–5+ years in senior kitchen leadership roles (Head Chef / Sous Chef level).
• Experience in hotel or high-end restaurant operations preferred.
• Good command of English; knowledge of Spanish cuisine is a plus.

Responsibilities

• Lead daily kitchen operations and ensure high-quality food execution.
• Train and guide the kitchen team to maintain discipline, hygiene and efficiency.
• Plan workforce needs, shift allocations and daily kitchen briefings.
• Ensure compliance with HACCP, safety and hygiene standards.
• Coordinate smoothly with other departments and ensure timely service.
