Job summary

Mövenpick Resort & Spa Bintan Lagoon is seeking an experienced F&B professional to support daily outlet operations on-site. You will coordinate opening/closing duties, manage reservations, and ensure service standards are consistently met across the guest dining experience.

You will supervise junior team members and casual staff, deliver guest orders, upsell offerings, and uphold HACCP and hygiene rules. You’ll partner with management to maintain smooth workflow and guest satisfaction.

Responsibilities

• Coordinate and assist in opening/closing duties and ensure settings meet standards before operations.
• Plan daily outlet operations in the absence of the Manager.
• Supervise junior team members and casual staff to ensure tasks are completed on time and per standards.
• Take and record restaurant reservations; reconfirm via phone or email daily.
• Take food and beverage orders according to guest requirements.
• Deliver food and beverage services according to standards and procedures.
• Ensure all F&B are served according to service standards.
• Upsell and promote F&B offers to maximise sales revenue; cross-sell other dining venues when needed.
• Adhere to HACCP food safety and hygiene standards.
• Keep supplies and equipment adequately stocked to support smooth operations.
• Handle guest complaints tactfully and report incidents to management.
• Supervise assigned work stations and oversee outlet operations in management's absence.
• Assist other outlets during peak times or as required.
• Check outlet/back-of-house cleanliness for F&B sanitation compliance.
• Maintain knowledge of all F&B services, contents, preparation methods, outlets, and hotel services.
• Be familiar with hotel fire and life safety procedures.
• Attend briefings, meetings, and trainings as assigned.
• Follow proper purchasing and requisitioning procedures.

Job Description

• Coordinate and assist in opening/closing duties and ensure that all settings are completed according to standards and procedures prior to the start of operation.
• Planning of the daily outlet operations in the absence of Manager.
• Assist management to supervise junior team members and casual labour under his/her leadership/section and to ensure that all tasks assigned/required in the outlet are carried out on time and according to instruction and departmental standards.
• Take and record restaurant reservations/cancellations in accordance to departmental standards. Reconfirm reservations through phone calls or email on a daily basis.
• Take food and beverage orders according to guest’s requirements and preferences.
• Deliver food & beverage services in accordance to departmental standards and procedures.
• Ensure that all food & beverage are served according to service standard.
• Up-sell and promote food and beverage offers at every available opportunity in order to maximize sales revenue. Cross sell other dining venue when outlet is full.
• Apply necessary precautions with regards to the hotel food safety and hygiene standards (HACCP).
• Facilitate the smooth running of the department through adequate supply of materials and equipment.
• Handle guests’ complaints and comments tactfully and efficiently. Report any complaints, incidents or other irregularities to management.
• Supervise and assist in assigned work station’s activities and oversee the operation of outlet in the absence of management.
• Assist other Food & Beverage outlets with their operations during peak times or when required.
• Check the outlet/back of the house cleanliness to ensure that it is in compliant with F&B sanitation and hygiene rules and regulations.
• Maintain complete knowledge of all food & beverage services, contents & preparation methods, outlets and hotel services/features.
• Be well versed in hotel fire & life safety/emergency procedures.
• Attend all briefings, meetings and trainings as assigned by management.
• Check the outlet/back of the house cleanliness to ensure that it is in compliant with F&B sanitation and hygiene rules and regulations.
• Following of proper purchasing and requisitioning procedures.
