Job summary

Bleu MATHIS Gili Asahan, a distinguished dining destination within the Dijiwa Sanctuaries portfolio, seeks an Executive Chef to lead the culinary team. You will craft exceptional dining experiences blending Indonesian heritage with international techniques on a breathtaking island setting.

You will oversee menu innovation, quality execution, and staff development, while maintaining high standards of food safety, cost control, and guest-centric service. Immediate availability preferred.

Qualifications

• Strong expertise in menu development, food costing, budgeting, and kitchen operations.
• Proven leadership skills with the ability to inspire, train, and develop culinary teams.
• Solid understanding of HACCP, food safety, and hygiene standards.
• Fluent in English, both written and spoken.
• Able to adapt to island resort operations and a luxury guest-focused environment.
• Indonesian citizens only.
• Available to join immediately and candidates domiciled in Lombok or local Lombok residents are preferred.

Responsibilities

• Design and execute seasonal menus that showcase local ingredients and Indonesian heritage.
• Lead, mentor, and inspire the kitchen team to deliver excellence in food quality and service.
• Maintain high standards of food safety, hygiene, and sanitation per international regs.
• Manage kitchen operations including inventory control, cost management, and budget adherence.
• Collaborate with the F&B Director to align offerings with guest experience goals.
• Conduct regular quality assessments and seek guest feedback to enhance dining experience.
• Introduce signature dishes to position Bleu MATHIS as a premier destination in the region.
• Represent Dijiwa Sanctuaries with professionalism and warmth to guests.
