Job summary

AYANA Komodo is seeking a Chef de Partie to join our culinary team on a remote island. You will focus on Western cuisine while supporting diverse international dishes in a luxury resort setting, contributing to high-quality dining experiences.

The role requires at least 1 year of relevant experience, strong knowledge of Western techniques, and a solid understanding of HACCP and food safety. You will work in a dynamic, multicultural kitchen environment on a stunning Komodo Island location.

Qualifications

• 1 year of experience as Chef de Partie or Demi Chef de Partie in a 4–5 star hotel or upscale Western restaurant.
• Proficient in Western culinary techniques, with exposure to other cuisines a plus.
• Good understanding of food safety, hygiene, and HACCP standards.

Responsibilities

• Prepare and cook a variety of dishes with a focus on Western cuisine, while supporting other international menu offerings when needed.
• Ensure dishes are executed according to standardized recipes, presentation, and portioning guidelines.
• Collaborate with senior chefs in menu development, tastings, and refinement of both Asian and global dishes.
• Maintain cleanliness, organization, and hygiene in the kitchen, adhering to HACCP and internal food safety standards.
• Support day-to-day operations within the assigned section, ensuring consistency, efficiency, and quality.
